PARSNIP – Hollow Crown: 100-120 days Parsnips produce roots with a sweet, nutty flavor and crisp texture. Flavor is best if timed to mature during cool weather. Roots are yellowish- white, shaped like a carrot, and may grow to 12”/30cm long and 2”/5cm across at the top. Use in stews and soups, steamed, sautéed in butter, or shredded raw in salads. A very heavy yielding root crop.
